POLLO ASADO

Grilling instructions:

-Thaw chicken before placing on grill, don’t let the temperature go above 40 degrees

-Take the chicken out of the bag and place in aluminum cooking pan. Grill with marinade juices for moist consistency

-Grill on medium to high until temperature reaches 165 degrees.

-Check temp with temperature probe.

-Should be nice and tender, pulling apart easily!

Ranchera (Carne Asada)

Grilling instructions:

-Thaw meat before placing on the grill but keep below 40 degrees.

-Make sure to butterfly the meat stretching it out with no folds or overlaps.

-Cook meat to 125-165 degrees depending on how you like it (rare-to well done)

-Check temp with a temperature probe.

-Should pull apart easily.

Taco Bar

Grilling instructions:

-Thaw meats before placing on grill but keep below 40 degrees.

-Cook meats separately to eliminate cross contamination, clean pan thoroughly before cooking different meats.

-Cook on grill or stovetop, make sure to keep moving the meats with a spatula, it will cook fast.

-Grill meats to 165 degrees.

-Put 2 tortillas lathered with oil on burner or stovetop.

-Flip tortillas until you see them start to puff.

-Add taco meats to tortillas topped with onions, cilantro, and salsa.
